Cooking With GeeJay!: Making of a Romantic Dinner For Two - Italian Style

Well, hello there.

Thanks for joining me on another segment of 'Cooking With Geejay.' This week, I am preparing a meal for my beloved. Tomorrow is our 8th anniversary and I decided that I wanted to cook a dish in honor of our love. All week long I have been racking my brain, trying to figure out what to make. Just then, he made the decision easy for me. 

He said, "Make the dinner that has brought us together. The one that has meaning to us." 

The dish that we used to eat at Sbarros on our trips to Kings Plaza. Our favorite dish, baked ziti with chicken Parmesan. Yummy goodness. 

On our dates, we used to eat at the restaurant before seeing a movie. We would sit and talk about things. This was the first time that I realized just how much I was into him despite some difficulty in the beginning. We talked about what we wanted to do. Our hopes and dreams. We talked about whether or not the movie would be good or not. It was those moments that we miss, because the theater no longer exists, coupled with our current financial status.

I bought all the ingredients today so when I come back from my job program, I will get to cooking this man's meal. I plan to have a nice and quiet evening, just the two of us. But sometimes things beyond our control tends to happen. I am also thinking about making a potato salad as a side dish for us. But this time instead of using celery, I will be using peas and carrots. 

Richard told me not to put too much into the salad because you don't want to over do it. You put too many ingredients and it takes away from the salad and perhaps affects the taste of it. (Listen to me sounding like a real cook. LOL)

I realized that when I don't think about it too much, I can actually pull off some awesome food. :) I can't wait to celebrate with him. After years of cooking for me, it's my time to cook for him. It is the least I can do to make this day one of the best days of our lives. 

I will let you know how everything works out. 

I am not going to lie to you. I am so nervous that it's going to turn out bad. But in my heart I think things will turn out  right. Just got to have a little faith. And faith can go a long way.
